Alessandro, our new chef from Roma, will be cooking spaghettini alla carbonara for us every Wednesday. Carbonara originates from Rome and the rich sauce is made with eggs and cheese. Carbonara means coal in English, and there are plenty of theories as to where the name comes from, but one thing everyone in Italy agrees on, is that it should not contain any cream! Our version is made with spaghettini in a deliciously creamy sauce with black pepper and guanciale, or pig’s cheeks.
You can now discover one of Italy's best kept wine secrets in Plough Way. We have recently started stocking Franciacorta, a stylish and elegant sparkling wine that is often described as Italy's answer to Champagne. If you are looking for a more interesting alternative to Prosecco or Champagne, you should come along and try this delicious Franciacorta from Bellavista.
Grown in the northern district of Brescia in Lombardy, Franciacorta was granted DOCG status in 1995. The wine is made using classic Champagne grapes like Chardonnay and Pinot Noir as well as Pinot Blanc. Contrary to the majority of Prosecco, Franciacorte is made using the traditional method, where the secondary fermentation is in the bottle and not in the tank - producing a dryer and more complex flavour.
